Dr. Peter Rainsford is Vice President of Academic Affairs at The Culinary Institute of America (CIA). As the chief academic officer of the college, Dr. Rainsford is responsible for all of the CIA's academic initiatives and the supervision of academic deans and directors.
Dr. Rainsford joined the CIA administration in 2006 after serving as Director of the School of Hotel, Restaurant, and Tourism Management in the Daniels College of Business at the University of Denver. Prior to his post at the University of Denver, he was the J. Thomas Clark Professor of Entrepreneurship and Personal Enterprise in the School of Hotel Administration at Cornell University, where he taught courses in strategic management and entrepreneurship.
Dr. Rainsford served in several Assistant Dean positions at Cornell including Assistant Dean for Academic Affairs, External Affairs and Business Administration. As a professor, Rainsford taught numerous courses including Hospitality Management Strategy, Graduate Food Chemistry, Quantity Food Production, Cafeteria Management, and Food and Beverage Control. He joined Cornell's faculty in 1968, the same year he earned his undergraduate degree from the university. He also earned his Master of Science and Ph.D. degrees from Cornell.
Dr. Rainsford's books include The Restaurant Planning Guide, The Restaurant Start Up Guide, and The Club Operational Review. He has served on the editorial board of Upstart Publishing and the board of The Journal of Small Business Strategy.
A two-time recipient of a Hatfield Award for the Enhancement of Undergraduate Education, Dr. Rainsford has also done extensive consulting and research in the foodservice industry.
